Welcome back to January’s edition of the #FoodieMamas delicious recipe round up. This month we say goodbye to a few bloggers who have joined us along the way, but rest assured, we have some amazing and delicious recipes coming your way. A fellow Canadian blogger Emily from The Best of This Life chose (a personal favourite) sweet potatoes this month. When I heard that, I knew I had to jump on these crispy and delicious treats that my family loves so much.
These were crispy and delicious when I made them, and my family ate them all in one sitting. It was a total treat one night for dinner, and we actually had them again two days later!Print
- 2 medium sweet potatoes
- 1/2 tsp garlic powder
- 1/2 tsp thyme
- 3 tbsp parmesan cheese
- 3 tbsp olive oil
- salt and pepper to taste
- Preheat your oven to 425 degrees
- Chop and peel your potatoes into 1 inch cubes
- In a bowl add olive oil, cheese, and seasonings
- Add sweet potatoes and stir to coat
- Spread evenly over a parchment lined baking sheet.
- Bake for 40 minutes, flipping once half way through.
