Use left over rotisserie chicken, or even left over turkey! These delicious bowls come together quickly, and let you get dinner on the table in minutes!


  • 2 cups shredded chicken
  • 5 cups cooked rice (I use basmati)
  • 1 avocado
  • 1 cup corn, if frozen, defrost
  • 1 1/2 cups black beans, rinsed and drained
  • 1 large tomato diced
  • Avocado, Cilantro & Lime Dressing (recipe below)


  1. Cook the rice as per directed.
  2. If you want a warm burrito bowl: In a small pot add 1/2 cup water, corn, and black beans. Bring to a boil, and reduce heat to a simmer for about 5 minutes. Serve on warm rice.
  3. Skip step 2 if you want a cold dinner (our favourite). In your bowl add about 1 1/4 cup of rice, about 1/3 cup of black beans, 1/4 cup shredded chicken, 1/4 cup of corn, 1/4 cup diced tomatoes.
  4. Top with fresh cilantro, hot sauce, avocado slices & Avocado, Cilantro & Lime Dressing.
