How To Start Your Morning off Right with Egg & Avocado Toast

Yes yes yes, I will say it again, breakfast is the most important meal of the day. It really determines how the rest of your day will play out (that includes your eating habits). I used to skip breakfast all the time, but what I’ve come to discover is that my morning meal is a 10-minute period where I can mentally prepare for the day. It allows me to quickly prioritize what needs to get done versus what would be nice, along with sort through any errands or last minute grocery items I may need to pick up. For that reason I try (I don’t always accomplish) to sit down and eat rather then eating in the car or on the go.

It also is what you put in your body in the morning that helps. I will share a typical weekday morning routine with you.

6:45am: get up and pour coffee for myself. I try and take 15 minutes of kid-free time to collect myself before the storm

7am: Ève and Audrey wake up, they make their beds, and get dressed.

7:15am: Get Hazel up. Change diaper, get her dressed. The kids head to the bathroom to brush their teeth and hair.

(Trick I wanted to share from a recent trip to the dentist. I asked how long they should be brushing their teeth since they are 5 and 6 years old, and she said as long as it takes to sing the alphabet! I normally get them to start brushing as I change Hazel’s diaper, and when I’m done, then I tell them they are done! #MomLife).

7:30am: Breakfast for the kids, start the bottle, and all three kids eat.

7:50am: Kids clean up their spots, get their school bags ready at the door with their shoes, coats, hats and anything else they may need for the day.

8:00am: Hazel plays with the girls, and now I allow a 30 minute show. I make and pack their lunches, water bottles, sign any forms etc…

8:30am Hazel goes down for a nap, and the girls get ready to catch the bus. I should mention that since we live in a bit in the country, the school bus comes to the end of our laneway.

9am: I clean up the kitchen, and sit down for my breakfast. I typically eat an orange or banana while the kids eat their breakfast just so I have something in my system to keep going for the morning. Now is the time I make myself something delicious and satisfying to start my day off right.

Egg & Avocado Toast

Ingredients
  • •1 piece of whole grain bread, toasted
  • 1 tsp butter
  • 1/2 avocado, sliced
  • 1 egg
  • 1 tbsp water
  • olive oil spray
  • salt & pepper
  • Sriracha sauce
Instructions
  1. Toast bread.
  2. In the meantime, in a frying pan over medium heat, spray a little olive oil. Crack egg open and continue to cook. Add 1 tbsp of water to the bottom and close with a lid. Cook about 3 minute or until the whites have set (no need to flip).
  3. One your toast is done, spread butter over, add slices avocado across the top, top with egg. Sprinkle with salt & pepper. Drizzle with Sriracha sauce. Top with cilantro if desired!
