Prosciutto Wrapped Asparagus

As I mentioned on Sunday, I need to ‘spread my wings’ and make more than salads as side dishes for my family. While salads do tend to be my ‘go to’ for a quick side/vegetable I really need to make more of an effort, and to be honest I think we’re starting to get a little sick of them.

Today, I wanted to bring you something a little different, but an easy recipe. The best part, this addition to your meal can be grilled, or roasted in your oven. Love it! I bring you, Prosciutto Wrapped Asparagus.

I love asparagus and it’s in season right now! It’s an amazing vegetable that’s so versatile but I think my favourite way of enjoying this would be this way. That extra layer of salty-goodness from the prosciutto makes these bundles absolutely mouthwatering. These bundles are also perfect to bring along with you to a potluck as you can make bundles for everyone and they are perfectly portioned out.

Both Ève and Audrey love these as a side dish and often ask to help out (since it’s so easy to make). The recipe below makes enough for 4 bundles but can easily be doubled or tripled to accommodate as many people enjoying. Plus you can turning on your oven and grill these as well!

Prosciutto Wrapped Asparagus – Oven

Description

This easy to make side dish is the perfect compliment for any meal!


Ingredients

  • 1 large bunch of asparagus
  • 8 slices of prosciutto
  • 2-3 tbsp of your best Olive Oil
  • Salt & Pepper to taste

Instructions

  1. Preheat your oven to 400 degrees.
  2. Trim the end of your asparagus to remove any tough pieces
  3. Spread them onto a plate and drizzle olive oil, salt & pepper over them. Make sure you rub the olive oil over each piece so they are coated.
  4. Divide into 4 groups. Take two slices of prosciutto and lay them on top of each other, then take your bundle and starting at one end of the prosciutto and start to roll.
  5. Place each bundle (prosciutto ends down) on a tin foil lined baking sheet.
  6. Bake for about 10 minutes, and turn. Bake for another 8-10 minutes depending on how crispy you like the end of the asparagus.

Prosciutto Wrapped Asparagus – BBQ

Description

A fun side, that is personalized. Each person will get their own crispy bundle of salty goodness – how can you say no to that?


Ingredients

  • 1 large bunch of asparagus
  • 8 slices of prosciutto
  • 2-3 tbsp of your best Olive Oil
  • Salt & Pepper to tast

Instructions

  1. Preheat your grill to a medium heat (about 400 degrees) and rub with a little olive oil.
  2. Trim the end of your asparagus to remove any tough pieces.
  3. Spread them onto a plate and drizzle olive oil, salt & pepper over them. (Work in batches if you need to). Make sure you rub the olive oil over each piece so they are coated.
  4. Divide into 4 groups. Take two slices of prosciutto and lay them on top of each other, then take your bundle and starting at one end of the prosciutto and start to roll.
  5. Place on oiled grill crosswise. You want to make sure the asparagus spears lay across the grills rather then lined up with the grills. That way if you accidentally break one bundle the spears won’t fall through… and then you’re left with out dinner. Now that would be tragic. 
  6. Grill about 8 minutes, and turn once so both side of the bundles get grilled and crispy.
  7. Remove when the spears become a little softer and have deep green colour.

That’s it my friends! Easy and delicious. And as I mentioned earlier Ève and Audrey can easily help with this. No knives required. You can easily snap the rough end off of the asparagus. This is a great weeknight dish as it really only takes about 5 minutes to prepare, and not a long time to cook.
