Description
Try this in summer when the veggies are the freshest! But you can always enjoy as a lighter side in the cooler months when you’re looking for something lighter to enjoy!
Ingredients
- English field cucumber
- 1/2 large red onion
- 3 – 4 Roma Tomatoes
- 1 lemon
- 1 tbsp olive oil
- salt & pepper to taste
- 1/2 cup fresh basil
- 1/3 cup crumbled goats milk feta cheese (I like this since it doesn’t come packed in water and I find has a creamier taste but regular feta will do)
Instructions
- Chop your cucumber in 1/2 or 1 inch pieces. Sliced your onion thinly into strips. Quarter your tomatoes, and chop each quarter in half. You want large chunk of tomatoes. Roughly chop or tear your basil leaves.
- In a medium sized bowl add the cucumber, tomatoes and onions. Squeeze the juice of the lemon (yes the whole thing) and drizzle the olive oil over top. Add the salt & pepper to taste and mix everything together.
- Sprinkle in the basil and goat cheese. Serve immediately.
