Fresh Cucumber & Tomato Salad

Description

Try this in summer when the veggies are the freshest! But you can always enjoy as a lighter side in the cooler months when you’re looking for something lighter to enjoy!


Ingredients

  • English field cucumber
  • 1/2 large red onion
  • 3 – 4 Roma Tomatoes
  • 1 lemon
  • 1 tbsp olive oil
  • salt & pepper to taste
  • 1/2 cup fresh basil
  • 1/3 cup crumbled goats milk feta cheese (I like this since it doesn’t come packed in water and I find has a creamier taste but regular feta will do)

Instructions

  1. Chop your cucumber in 1/2 or 1 inch pieces. Sliced your onion thinly into strips. Quarter your tomatoes, and chop each quarter in half. You want large chunk of tomatoes. Roughly chop or tear your basil leaves.
  2. In a medium sized bowl add the cucumber, tomatoes and onions. Squeeze the juice of the lemon (yes the whole thing) and drizzle the olive oil over top. Add the salt & pepper to taste and mix everything together.
  3. Sprinkle in the basil and goat cheese. Serve immediately.
