A simple salad, perfect for a light lunch… or pair with a grilled chicken breast for a complete meal!
- 1 pear, sliced thinly
- 4 tbsp dried cranberries
- 4 tbsp goat cheese
- 2 tbsp pecan pieces
- 5 cups Spring Mix
- 4 tbsp Balsamic Vinaigrette
- In a large bowl add the spring mix, cranberries and pean pieces. Toss with tongs so everything is mixed well and divide onto two plates.
- Top each plate with 2 tbsp goat cheese, and drizzle balsamic vinaigrette over.
- Add the sliced pear and serve.
