Lightly Sweetened Granola

Description

The perfect way to start your da off right, or grab a handful to snack on! Lightly sweetened makes this granola a total win in our house!


Ingredients

  • 1 1/2 Quick Cooking Oats (NOT instant, Also use gluten-free if you would like to make this gf)
  • 1/2 cup uncooked Quinoa
  • 1/4 cup Flax Seeds
  • 1/4 cup Pecan pieces
  • 1/4 cup Walnut pieces
  • 1/4 cup Chia Seeds
  • 1/2 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp coconut or vegetable oil
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 2 – 3 tbsp brown sugar (optional)

Instructions

  1. Preheat your oven to 350 degrees.
  2. On a parchment lined baking sheet, spread quinoa, and oats out evenly.
  3. Toast in the oven or about 12-14 minutes or until they turn a little golden.
  4. Meanwhile, in a large bowl, combine honey, unsweetened applesauce, oil, cinnamon, nutmeg, vanilla and brown sugar if using. Whisk until everything is mixed well.
  5. Add the flax seeds, peans, walnuts, chia seeds and stir well.
  6. When the oats and quinoa are done, remove from the oven and turn the heat down to 325 degrees.
  7. Add the oats and quinoa to the honey/seed mixture. Stir until everything is coated.
  8. Spread back out on parchment lined baking sheet and make sure everything is evenly spread out. Place back in the oven for about 20 minutes or until everything turns golden.
  9. Let cool on the sheet, then break into clusters.
