Strawberry-Lemonade Smoothie

So let me start by saying here in Ottawa, Canada we had a green Christmas. It was a little odd because that’s not typical here… and then IT happened. We got DUMPED on by a pile of snow. For two days when I looked outside all I saw was snow flying sideways… eek! And since shortly after Christmas, it’s been grey and snowy here. Now I’m not saying I am opposed to snow, winter or the cold. I enjoy it actually! What I detest is the awful driving conditions and when the temperature hovers around the ‘too cold even for my winter coat and boots’ mark. Who’s with me?!

Strawberry-Lemonade Smoothie! A delicious and easy way to start the day! Simple and surprising ingredients that you already have!

So to help ‘combat’ the winter dumping, it was time to brighten up in here, and there’s nothing better them summer flavours poking through. This Strawberry-Lemonade Smoothie has some surprising additions to it and was exactly what I was craving. I did add some Chia Seeds to help ‘fill it out’ a little more and make it stick with me a little longer then just frozen fruit pureed. I would also recommend this if you were looking to make this for after a work out and wanted more, adding vanilla protein powder would work out really well.

The Ingredients:
Serves 1

  • 1 cup frozen, unsweetened strawberries
  • Juice of 1/2 lemon (about 1 1/2 tbsp)
  • zest of 1 lemon
  • 1/3 cup fat-free vanilla yogurt
  • 3 tbsp unsweetened apple sauce
  • 1 tbsp natural honey
  • 1/2 tbsp chia seeds
  • 2/3 cup ice
  • 1 scoop of protein powder (optional, I didn’t add it as I was sharing with my two oldest kids, and they don’t get protein powder)

The How-to:

Ok guys, are you ready?? This is going to be hard so play close attention… add everything to your blender, and puree until mixed well!

I love smoothies. They add extra nutrients, or can serve as a quick breakfast on the way out the door. This one really does make 1 serving, so if you’re going to make one for you and a friend, double it. I also like adding a little ‘extra crunch’ so I topped mine with about 1 tsp of Organic Cacao Nibs. These little chocolate clusters seems to be making an appearance on a lot of my meals lately and are the perfect little crunch. What do you like to add in your smoothies to make them “last a little longer”? Any special toppings you add?

  1. That sounds fantastic! I just bought some chia seeds and I have frozen strawberries left from last year’s garden. I know what having for breakfast tomorrow!
