Mojito Bars

It’s like a lemon bar… but not so much. Don’t you love when things get twisted around like that? I love the classics – don’t get me wrong. A good basic hearty chilli, or basic mashed potatoes… any day of the week they will work for me. They bring back memories, and really induce the feeling of comfort (I guess that’s why they’re called comfort foods! ;)), but sometimes I like to get a little bit crazy… inventive? Yes I like that better… I like to get a little more creative and inventive and take those classic dishes and switch them up a little. That’s how this tasty treat came about.

Rather then sticking with a thin (sometimes soggy) bottom, I made sure there was more of a shortbread-esque layer (think cookie, not crumble) on the bottom, along with refreshing mint mixed in with the lime. And that fantastic green colour?! Oh that’s all natural from the zest and juice.

So with out further delay, today I’m sharing my (easy and kid friendly) Mojito Bars!

The Ingredients (by layer):

Bottom:

  • 2 cups White All-Purpose Flour
  • 1/2 cup white sugar
  • 1/4 tsp salt
  • 1 cup (2 sticks) of salted butter, cubed and cold

Top:

  • 1 1/2 cups white sugar
  • 1/4 flour
  • 4 large eggs
  • zest & juice 7 limes
  • 1/2 cup finely chopped mint
  • icing sugar

The How-To:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl add the bottom ingredients. With a pastry knife, cut up/mix all the ingredients until you make coarse sand.
  3. Grease a 9×13 inch pan. pour mixture into the pan and press firmly with your fingers until everything is packed down. Take a fork and poke holes through out.
  4. Bake for about 20 minutes or until the top is golden.
  5. Remove from oven and let cool while you make the topping.
  6. For the top layer, add everything from the top ingredients minus the icing sugar. Mix well and pour over the cooled both layer.
  7. Place back into the oven and let bake for about 20 minutes. Bring to room temperature and refrigerate for another 2 hours until cool.
  8. Sprinkle icing sugar over, cut into squares and serve!

This recipe is fairly straight forward, and is easy for kids to help out! I love when my girls join me in the kitchen, and always find that even when they help with the simplest task, they are excited to eat and show off what they did. It’s all about #kidsinthekitchen.   1. I love “inventive” recipes, and honestly, you had me with Mojito in the title. Mojitos are my favorite summer cocktail 😉 These look luscious, and what a gorgeous photo!

  2. WOW this is loaded with lime….and I happen to love limes. Don’t get me wrong lemons have their place (like in lemon bars and pie)…..but I prefer the acid of limes in my cooking. Add a tequila glaze and this turns into an adult version….awesome!!
