Pomegranate Bites

Happy Wednesday Everyone! I hope you all had a wonderful weekend, and to my american friends, Happy (early) Thanksgiving! I can’t believe the Christmas holidays are coming upon us, and so soon! Where did 2015 go?! I don’t know about you, but I am already done most of my Christmas shopping and have planned a special Advent countdown for the kids! I love this time of year… and Clint’s the same way, so I tend to go a little (or a lot) crazy this time of year with meal planning, and preparing to host Christmas again. Since we moved into our new place, we have the room to accommodate both of our families, and since they both live so close, it means we don’t need to pick sides any year. Between Clint’s family and mine we have 9 more people join us… so a total of 14. As everyone arrives I like to have a few easy and light appetizers ready since I know what’s about to come.

That’s why these easy and delicious Pomegranate Bites are a wonderful way to help ring in the holidays… and I have to say it doesn’t hurt that they are festive looking as well.

Pomegranate Bites

You can literally make these in about 15 minutes, and can adjust the recipe to the crowd. Since I made these one night for my book club (which you would have seen if you follow me on Instagram), and then the following day for me and the girls, I will give you the ingredients and the general steps but there really aren’t any measurements!

Ingredients
  • Goat Cheese
  • Pomegranate Seeds (from about 1/2 a pomegranate)
  • Chives
  • Olive Oil
  • Freshly Cracked Black Pepper
  • Paris Toasts (or any other cracker that is simple and has little to no flavour)
Instructions
  1. Spread a little goat cheese on each cracker.
  2. Depending on the size of your cracker, add 3-4 pomegranate seeds, pressing a little so they sink in a little into the goat cheese and stick.
  3. Arrange on a platter.
  4. Sprinkle chives, drizzle olive oil, and add freshly cracked pepper over the dish.
  5. Serve immediately.
