Sabrina’s Brown Sugar Pound Cake

Hello my very patient friends! How are you doing? Me? Well it’s been crazy around here with a new born (well 3 week old), back to school, the fall always being a crazy busy time, and well just life. But what can I say… I LOVE IT! It’s soooooo nice being at home full time with my family… ask me in 3 months if I still feel the same? Especially after winter sets in. 

In saying that, I am feeling better and my energy levels are starting to come back to me and I’m itching to get back to cooking and blogging, and I have some epic recipes coming your way. But that’s not to say I don’t love a good guest blogger and today I’m sharing with you a fellow Foodie Mama’s recipe and I’m SO EXCITED to share! Sabrina from Dinner, Then Dessert is sharing her amazingly delicious Brown Sugar Pound Cake recipe. This looks so delicious, I just might have to make one for school lunches & desserts this week! As a college freshman I was also an employee at Starbucks. It was the end of the 90s and I couldn’t think of a cooler place to have my first job. Since the location was about a block from my college I got to work with friends and at nights during closing we would behave terribly and give away far too many goodies to all the customers before we had to toss them at closing. This was before walking into a Starbucks felt like you were in a bank with 10 cameras. We were in a much more relaxed atmosphere.

So when I had started Starbucks was beta testing an alternative option to the most popular baked good we sold, the iced lemon loaf cake. It was a crispy sugar crust brown sugar pound cake with a thick brown sugar frosting. It never made it onto the menu (not sure why we sold out of them every single day!) but soon after it disappeared my coworker/friend/classmate and I decided to try and figure it out in our dorm kitchen. This is the result of our internet sleuthing/making do with the ingredients we had and creating a version all our own.

Every time I make it I refer to it at the Starbucks Brown Sugar Pound Cake and there is only one other person who understands the reference, but it will forever be that delicious college food memory.

The Recipe:
1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1½ sticks unsalted butter, at room temperature
1 cup firmly packed light brown sugar
½ cup granulated sugar
2 extra large eggs, at room temperature
1/2 cup whole milk
½ teaspoon vanilla
Preheat oven to 325 degrees.

Spray baking spray into an 8×4 loaf pan.

Sift the flour, baking powder and salt together. Beat the butter and brown and white sugars on medium in a stand mixer until noticeably lighter in color, about 3-4 minutes. Add eggs and vanilla and mix until combined. Add the milk and dry ingredients in 1/3 portions, alternating, starting with the dry ingredients. Bake for 60 minutes. If it isn’t done when you insert a toothpick, check it again five minutes later.

Brown Sugar Frosting

1 stick unsalted butter
½ cup firmly packed brown sugar
¼ cup whole milk
¼ tsp. salt
2 tsp. vanilla
2 1/2 cups confectioners’ sugar

Melt the butter in a saucepan on low heat. Add the brown sugar and raise the heat to medium.  Cook the boiling mixture for 2 minutes, then remove from heat, add the milk, salt and vanilla. Whisk until completely combined. Let cool until just barely warm, maybe about 15 minutes. Add in the powdered sugar and whisk until well combined. If you want a thinner frosting, add 1 ½ cups of powdered sugar and add in small increments from there until you reach your desired consistency.
