Peach & Blueberry Smoothie
Welcome back to the week, and welcome back to the week routine! With summer temperatures still soaring in my little part of the world, this pregnant mama is having a hard time keeping cool. So I try to drink as much water as I can, but one cannot survive on water alone. We are also trying to keep our food cooking on the grill to prevent the house from warming up, but on a monday morning, who’s going to fire up the girl and start cooking bacon? Am I right? So I was looking for something sweet, cold & healthy to make for a quick morning breakfast and after scrounging through my fridge & freezer, I came up with this little beauty. I know it’s simple – but that’s the point. And It only makes one serving… another bonus for a quick monday morning grab and dash breakfast. Plus you can get the kids to help you in the kitchen – always a bonus for me since my girls love to ‘cook’. Today let’s talk about the Peach & Blueberry Smoothie.

Single serving smoothies are great for a quick, on the go snack, and can pack a punch in nutrients – just ask Deepkia from Easy Baby Meals with her homemade shake (yes… that’s a hint/#sneakpeak with what’s coming to Fuchsia Freezer this week ;)). You can easily double or triple this recipe for more if you’re not alone.
The Ingredients:
- 1/2 cup blueberries
- 1 cup frozen peach slices
- 1/3 cup vanilla yogurt (I used dairy-free vanilla flavoured coconut yogurt)
- 2 tsp chia seeds
- splash of coconut water
The How-To:
Note: I find the yogurt I use can be quite thick, so I tend to add a splash of coconut water to help get everything to the consistency I want. Skip this if you use a creamier yogurt.
- Place everything in a blender, and blend until the consistency you desire. Top with a few fresh berries and serve in your favourite glass or mason jar!

I know, simple right? I like to add/sneak in the chia seeds for a little nutritional boost since this will typically be a meal for myself (or part of a meal for my girls). Since todays recipe was so simple to write about and make, I thought I would share more with you about whats coming up on the blog…

My son is on a smoothie kick lately and I have a drawer full of peaches and coconut water in the pantry. I must try this soon.

I love the blueberry/peach combo – it’s so tasty in smoothies! I love adding chia seeds too, great way to bump up the nutrition!
Chia seeds… easy to mix into anything, and TA DA an added health bonus right?! I love when it really is THAT easy 🙂

I’m still getting used to the consistency. I used to love yogurt & granola for a snack or part of my breakfast, but i’m looking for a good dairy-free yogurt that is still creamy. I guess it’s all about experimenting?? But I will say that this particular brand (Yoso) has a great taste and does make the smoothie thick which is nice.

The blueberry and peach sound awesome together. Blueberries are one of my favorite smoothie fruits, but I have not done that combo.

It kinda just came together… probably because of the pregnancy LOL but yes, this heat and my feet do NOT get along! Let’s not even talk about hair! ha ha… she SHOULD be here soon enough, so that will hopefully help some 🙂
