BBQ Chicken Mini Pizza in a Pinch!

Hey everyone! First off thanks for your patience during our little daily trip. We spent a few days at Clint’s family cottage and it was definitely something we all needed. It was our last four-some vacation which was a little weird to think about, because soon enough, our little Hazel Nut will be joining us… CRAZY! In saying all of that, the heat has been ridiculous the past few days, and to help with keeping our house a little cooler, I have resorted to my crock pot, a grocery store BBQ chicken, and some simple salads to accompany. But what happens when you are done with pulled pork, and you still have extra BBQ sauce on hand… well you make BBQ Chicken Mini Pizza in a Pinch!

These extremely easy pizzas can be assembled and in the oven (or on the grill) in under 10 minutes flat, and dinner is served about 15 minutes after that… just enough time to grab a cool drink and relax. This takes left-overs to a whole new level, and so easy to make.

The Ingredients:

  • 4 Mini Naan Breads
  • 3/4 cup of cooked chicken shredded
  • 1/2 cup of your favourite BBQ Sauce. I used this homemade one and it was fantastic!
  • 1/4 cup chopped onion
  • 1/4 cup chopped yellow pepper
  • 1 cup jalapeño cheddar cheese, shredded

The How-To:

  1. Pre-heat your oven to 400 degrees, or get your BBQ fired up!
  2. In a bowl mix your chicken and BBQ Sauce together.
  3. Top the Naan Bread Rounds with the mixture.
  4. Add vegetables & cheese.
  5. Place on a parchment lined baking sheet and bake for 10-15 minutes, or until the top is golden and bubbly. Option 2 is to place on med-low BBQ heat, close lid and let bake for about 10 minutes or until cheese is bubbling.
  6. Remove and serve!

That’s it my friend, easy peasy! I love that this was a great weeknight dinner, or save for a no-cook friday night meal… and it’s all left overs. How simple and great is that?! BBQ sauce from my pulled pork one night, and some shredded chicken from a quick, last minute grocery store bbqd chicken.

This kid-friendly dish is one in a million, and you could easily spice it up by adding some hot pepper flakes into the BBQ sauce when you are mixing it around with the chicken, or try sautéing the vegetables for a different type of flavour. There are so many ways you could take this. Add a little arugula on top before serving and ta da a new twist on classic pizza. The naan breads were perfect for making individual pizzas, and if you’re having a kids birthday party, would work well for each kid t decorate. I can’t say enough about the power of left overs – don’t waste last nights dinner, make it fun for tonight, and no one will know! The kids and Clint loved this, and it will defiantly be added to the line up when the baby comes and I’m frazzled trying to figure out “something new and exciting” for dinner tonight!

  1. This looks so delicious! I remember making mini pizzas with biscuit dough my mom would roll out and we all got to add our own toppings. I like the idea of the naan though as that is far more pizza like.
