Easy Peasy Chicken Strips

Not sure what to make with that next package of chicken you just bought? Kids weren’t a huge fan of the “chicken a la king” you tirelessly tried to make (and impress your family with)? Why not get them involved with your next meal? Why not give THEM the chance to cook for you?! And to top it off… they can do it on a weeknight! No, rest assured I’m not feeding you false hopes and dreams, I’m giving you a little reprieve… and your kids the chance to help out in the kitchen! They say when kids are involved in what they eat they are more likely to eat it… thus resulting in one less night of “for the love of pete, would you please please please just eat what’s on your plate”.

 Listen, we’ve all been there… I feel for you, I really do. That’s why my good friend I have brought to you the oh so yummy, kid-friendly, Easy Peasy Homemade Chicken Fingers. What I like about these: they are healthy… enough. Let’s be honest we have all at one point in our parenting lives succumbed to a box of chicken nuggets, baked them from the frozen state, and called them dinner… made with a side of frozen French fries?? Am I ringing a bell anyone? I am certainly NOT shaming anyone who’s done that…. Heck sometimes, it’s just easier, you know they will like them, you’re in a rush or gosh darn it you just DON’T want to cook yet ANOTHER night… I HEAR YA! I like these dippables since they are easy to put together, and I know what is IN and ON them… it’s not just processed chicken with a questionable coating. And there is butter involved… so you can’t say no now right?!?!?!

Kids can jump right in and help you, it’s very simple. You can handle the slicing, and baking parts… and they can handle the prep work! Might be the perfect time to ask them how their day r school or daycare went? Plus it’s quality time! Win (for kids helping) – Win (for quality time together) – Win (somewhat healthy – you know what’s in it).

The Ingredients:

  • 2 tbsp Butter, melted
  • 1/2 cup Panko Bread Crumbs
  • 1 tsp Thyme, dried
  • 2 tsp Basil, dried

The How-To:

  1. Preheat your oven to 400 degrees.
  2. Place all of the dry ingredients in a shallow dish, and stir making sure everything is mixed well.
  3. Cut your chicken into strips (as big or small as you like… you can make them nuggets if you want).
  4. Brush butter onto each strip coating both sides, and dip/roll into the breadcrumb mixture. Work in batches until you’re done.
  5. Place on a tin foil lined baking sheet.
  6. Discard any bread crumb mixture when you’re done!
  7. Bake in your oven for 15 minutes, flip and return to oven for another 10 minutes or until chicken is cooked through.

And that’s it! Yup! Easy Peasy, kid-friendly and a sure fire success for you and your kids!

Serve these up with ANYTHING you can think of… try Prosciutto Wrapped Asparagus? How about just some vegtables cut up? I served mine with Apple Cabbage Coleslaw. My girls ate them all up… and who am I kidding, Clint and I did as well. It was a great week night meal and not your average chicken dish. I hope your family enjoys!
