The “Soon-to-be” Spring Mocktail

Happy Saturday Friends! I have to say I love appetizers, and I love happy hour! Last summer I went to Peterborough, Ontario for my cousins bachelorette & baby/wedding shower. I had an absolute blast, and ended up at a martini bar half way through the night. I had this drink (that I can’t remember the name of), but it had a similar taste to this.

Now since I’m pregnant: bye bye cocktails, hello mocktails!

The Soon-to-be Spring Mocktail

This awesome martini-inspired drink comes at a perfect time. The bright colour and fun flavours makes me wish summer and the heat was here now. This recipe takes a total of 5 minutes to prepare, and the best part, you can make it per glass or by the pitcher.

Serves: 1.5 Litres
Ingredients
  • Cranberry Juice (I used diet so it wasn’t so sugary)
  • Pineapple Juice
  • Peach flavoured sparkling water
  • ice!
Instructions
  1. Add ice to a pitcher.
  2. Add 2 cups of cranberry juice, 3 cups of pineapple juice.
  3. Top with the peach sparkling water.

 

 

The Drink

If you want, I’m also sharing per drink version. All you need to do is add ice to your glass, then 3/4 cup of cranberry juice, 1 cup of pineapple juice and top with the sparkling water.

Two Drinks

Also, don’t forget to garnish! You and your possible guests are worth it! The twist of a lemon and a few extra cranberries in your drink make the presentation just that much more special. And you are worth it!

I served this during ‘happy hour’ at our house with my Roasted Garlic & Black Bean Salsa. It was a wonderful way to bring Clint and I together after a busy Saturday. Have a great weekend everyone, and I look forward to continuing this fun and exciting journey with you!

    1. I love that this is awesome in a pitcher if you’re hosting a baby shower or wedding shower, or you can make by the serving… You’re not stuck in having to make a pitcher just for one drink!

    1. LOL I hope you guys enjoy as much as we did. It’s always nice to treat the kids every once in a while and by using the diet or low-cal version, I noticed the sugar amount dropped which is nice. I’m not a HUGE fan of plying my kids with sugary drinks, but this was just the right mix!
